Tonight’s Entree:
Greek foccacia, stuffed with: baked spinach cannelloni, mushrooms, and extra sauteed spinach cooked in spicy spiced vodka sauce and topped with fresh mozzarella and parmesan.
Cannelloni and foccacia came pre-made, the foccacia from a farmer’s market just outside of Georgetown in DC, and the cannelloni from an import italian food store (appropriately named The Italian Store) just across the Key Bridge, in Rosslyn, VA.
The sauce was just a mediocre vodka sauce from the grocery store, but I added a bunch of sage, basil, oregano, powdered garlic, pepper, and, my secret ingredient for spicing up the sauce, crushed red pepper flakes, then cooked until it reduced nice and creamy (it was a little watery before, that’s what I get for not making it from scratch). The crushed red pepper flakes are great because they can turn a somewhat bland sauce into something similar-tasting to an arrabiata. So with using a creamy vodka sauce to start, you get creamy AND spicy. Best of both worlds. IT’S REALLY SPICY! =D
And now I think I’m might go lay down while my stomach explodes with carb-gorged joy. =D
Tonight’s Appetizer:
Baked Potato Crisps (Seasoned with salt, pepper, thyme, powered garlic).
I think I like these better than french fries. SO easy to make. Crispy on the outside, soft and potato-ey on the inside, not greasy AT ALL. And you can apply a much more versatile range of seasonings. (I just wish I had had some rosemary!)
